Aloo Gobi Curry

Ingredients:

  • 1 cup Fresh scrapped Coconut
  • 1 cup Coriander Leaves
  • 4 Green Chillies
  • 4 Cloves of Garlic
  • 1 Onion finely chopped
  • 1 Large Potato
  • 2 cups Cauliflower Florets
  • 3 tbsp Oil
  • 1 tsp Cumin Seeds
  • pinch of Hing
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Garam Masala
  • 1 tsp Coriander powder
  • Method

    • First put together Green chillies, coconut, garlic, coriander leaves in to blender and grind to make smooth paste.
    • Peel the potato and cut that in to small chunks and put that in to cold water.
    • Wash cauliflower and cut that in to florets.
    • Heat up oil, add cumin seeds.
    • After cumin seeds sizzle up, add hing and finely chopped onion.
    • Cook until onion gets light golden color.
    • Then add garam masala, coriander powder, turmeric powder mix and cook for a minute.
    • Then add green coconut chutney, mix and cook for 2 minutes.
    • Add potato chunks, mix well, add some water and salt.
    • Cover and cook for 15 to 20 mts or until potato is almost cooked.
    • Then add cauliflower florets, mix, cover and cook until cauliflower cooks completely.
    • Serve hot with Chapati or Rice!
