Aloo Gobi Curry

Ingredients:
- 1 cup Fresh scrapped Coconut
- 1 cup Coriander Leaves
- 4 Green Chillies
- 4 Cloves of Garlic
- 1 Onion finely chopped
- 1 Large Potato
- 2 cups Cauliflower Florets
- 3 tbsp Oil
- 1 tsp Cumin Seeds
- pinch of Hing
- 1/4 tsp Turmeric powder
- 1/2 tsp Garam Masala
- 1 tsp Coriander powder
Method
- First put together Green chillies, coconut, garlic, coriander leaves in to blender and grind to make smooth paste.
- Peel the potato and cut that in to small chunks and put that in to cold water.
- Wash cauliflower and cut that in to florets.
- Heat up oil, add cumin seeds.
- After cumin seeds sizzle up, add hing and finely chopped onion.
- Cook until onion gets light golden color.
- Then add garam masala, coriander powder, turmeric powder mix and cook for a minute.
- Then add green coconut chutney, mix and cook for 2 minutes.
- Add potato chunks, mix well, add some water and salt.
- Cover and cook for 15 to 20 mts or until potato is almost cooked.
- Then add cauliflower florets, mix, cover and cook until cauliflower cooks completely.
- Serve hot with Chapati or Rice!
