Aavakaya / Mango Pickle Recipe - Summer Special

Aavakaya is one of the most popular pickles of our Indian Cuisine. Aavakaya is a spicy and tangy pickle prepared in Andhra and Telangana homes. As the name says, aavakaya is prepared with 'aava' which relates to aavalu or mustard seeds and 'kaya' means raw fruit. This mango pickle is prepared with the combination of mustard seeds powder and matured & sour mangoes along with other spices. Here I have shared step by step photos of the preparation of Aavakaya / Mango pickle. This pickle can be stored in a glass jar and used for about an year.

Usually the traditional measurement of making Aavakaya / Mango pickle is 6 : 1 : 1 : 1 : 1/4 (interms of any fixed measurement cup) for chopped mangoes : mustard powder : salt : chilli powder : fenugreek powder.

Here, I have shared the measurements for 20 medium sized mangoes.


Ingredients

1. Raw Mangoes - 20 (medium sized)
2. Mustard seeds - 250 gm
3. Fenugreek seeds - 50 gm
4. Salt - 500 gm
5. Chilli powder - 500 gm
6. Turmeric powder - 2 tbsp
7. Garlic - 250 gm (10 -12 whole garlics)
8. Oil - 1 litre

Preparation Method

Wash and dry all the mangoes; wipe them with tissue or a dry cloth before use (to ensure the absence of any moisture content on the skin of the mangoes). Now using a large knife, cut the mangoes into pieces, take them into a large tray.

Sift salt and chilli powder using a flour siever or sifter, put into bowls and keep turmeric powder ready.

Dry roast fenugreek seeds and grind them into a fine powder.

Grind mustard seeds also into a fine powder.


Take out the cloves from 5-6 large garlics and crush them to a rough paste.

Peel off another 5-6 large garlic's cloves and keep them ready.

Now add 250 ml of oil to the chopped raw mango pieces and mix well.

Then add turmeric powder and mix it well.

Now, add crushed garlic, mix well.

Then, add fenugreek seeds powder, mix well.

Add mustard seeds powder, mix well.

Now add salt and mix well.

Then add chilli powder and mix well.

Finally add the peeled off garlic cloves and mix well.

Now put all the prepared mixture of spices and mango pieces into a glass jar or bottle. Here I used the traditional jar used for pickles in South Indian homes.

Finally pour oil and close the lid, store it for 2 days.

Mix the whole pickle once on the third day of preparation. The prepared Aavakaya / Mango pickle stored in a glass bottle or jar can be used for one year. The spicy and tangy, traditional South Indian Aavakaya / Mango pickle is ready to taste...!!
